About the evening

Izakaya culture at a shared table.

Izakaya is the Japanese tradition of informal places people go to after work to drink and share many small dishes at one table. The point is less the food than the time spent together: dishes arrive one after another, go to the middle of the table, and are tried by everyone. In this BER-LINK masterclass with Yulia Mostovaya the group cooks a modern Japanese menu together and then eats it together. The evening is hosted in Russian.

Format

Everyone cooks a dish

A masterclass and a networking evening in one: each participant prepares one dish of the menu, and the group learns Japanese products and techniques along the way, from dashi, miso, and yuzu to mirin, tempura, and yakitori.

Küchenstudio Leicht

Bismarckstraße 38, 10627 Berlin. A kitchen studio with room for the whole group to cook, plate, and then sit down to the finished menu together.

Menu of the evening

Gyoza in yuzu dashi

Japanese dumplings with a beef filling, served in a light dashi broth with yuzu. The fresh citrus acidity keeps the taste bright and very light.

Tender leek in miso sauce

Leek with an aromatic miso sauce, lime, garlic, and a light sweetness of honey.

Salmon sashimi in nabu sauce

Thin slices of fresh salmon in a Japanese marinade of soy sauce, sake, mirin, and citrus. A soft, slightly sweet taste with pronounced umami.

Duck breast with apple and ginger

Duck cooked sous-vide at low temperature so the meat stays especially tender, served with an apple and ginger sauce.

Yakitori chicken skewers

Pieces of chicken on skewers, marinated in soy sauce and mirin with ginger and fried to a golden crust.

Tempura prawns

Crispy prawns in a light tempura batter, served on a fresh salad with homemade mayonnaise and a piquant sauce.

Lemon and yuzu pastries with matcha ice cream

A delicate lemon and yuzu cream together with green tea matcha ice cream, a fresh and light end to the evening.
